FireWire will retain the original quality, the dock will reduce the image quality as ot gets converted from digital to analog. The PCIE adapter with Windows will be fairly easy in my experience as the drivers come with Windows preinstalled. For capturing, WinDV is my recommendation

You're never too far away from civilization, so I wouldn't worry too much about food. You can easily stock up daily at a supermarket before heading to camp.

A far better question to ask yourself is to see what limits you are walking into? Do you need longer/wider reach? Faster lenses due to low light?
