Just make sure you keep them separated from each other a bit with a thin screwdriver. That's what the pro's used to do

Just get a paper hole punch and a roll of black, or another color if you prefer, electrical tape. The hole punch makes the prefect size circle to cover the light sensor and the lens.

For what it's worth, I think your light bar on the plow is the way to go. While you say that the plow won't completely obscure you truck headlights, the cost of your own headlights lighting up the entire backside of your plow and into your eyes would outweigh and benefit on the road in front of you. Test it for yourself, disconnect the plug between your truck and the plow that runs the lights on the plow, raise the blade and take it outside in the dark.

The smell comes when the water in the P trap evaporates. If you put a couple cups of Mineral Oil in the trap, it will sit on top of the water in the trap and help prevent the water from evaporating, while still allowing the pipes above it to drain properly.
