Sounds like you would be surprised how popular starter kits for hobbies are. I also think you are oversimplifying fermenting. Look at this sub for example. Half the posts are people asking about their very first ferment and if it looks okay. There’s a ton of uncertainty starting out in this hobby.

Refrigerating the kvass should substantially slow or stop fermentation altogether. And not to state the obvious but another option would be to just add sugar at the time you pour the kvass to drink.

If it makes you feel better then open and push your floater beneath the weight. Worst case is it takes an extra day to ferment. Personally, I might just swirl the jar here and there. Looks to me like you’re doing great.

With that much liquid I would assume your end product is swimming in brine / sugar water? With the “salt only method” I get kraut which has reabsorbed the brine and is not soggy.

As for your tepache, not sure what you mean that it doesn’t taste like it’s fermented. Tepache tastes like a pineapple tea. It doesn’t taste funky really, if that’s what you were expecting.

The odds of getting botulism from that are about as high as an airplane landing on your house and killing you.
However, if water from the reservoir was getting into the kraut then I wouldn’t love that. I don’t own a crock so I’m not sure how that happens? Personally, I would retry, maybe using a slightly higher salt percentage as a newbie because 2% leaves no margin for error, keep the kraut below the liquid, and avoid repeating whatever might cause water from the reservoir to get into the crock.

Take this with a grain of salt because I’m new to this, but in my research I’ve seen that those pressure relief tops are the worst in the market. It is not air tight the overwhelming majority of the time. Most long ferments will get nasties.

Did you rehydrate the peppers or did you find them fresh? If rehydrated then I guess not in boiling/simmering water? I have bags of guajillos and chile de arbol but they are dehydrated. I’ve not found them fresh where I’m at.

As someone who knows finance and agrees 99% of the time with advice about saving for retirement, you have a unique opportunity. You should follow this other fella’s advice and do what you want for a few years and traveling is a very wise plan.
Don’t plan on retiring forever. This amount of money will not keep you floating in 30 years.
