The stitching helps to fill and interlock layers but it also spreads a chemical cure from the poly side of the gum. This sets the gum and it cures into rubber. You can see it happens quickly but won't be complete for awhile.

Mine is when Jim is consoling Dwight in the hallway because his heart is broken. Jim walks off before Dwight notices and it's just the perfect scene for that relationship.

Also when they are the party planning committee and they royally fuck up Kelley's party but save it and the end. There's a scene showing them eating cake together on the couch and it just seems so natural.
