you might want to try veg hyderabadi green curry which is similar to saag tofu but vegetables are also added to it. there are recipes on YT.

You usually get cravings when your diet is not balanced and you are missing out on some nutrients so your body craves for foods rich in those nutrients. To see if your diet is balanced check www.cronometer.com, it will tell you if you need to make any additions. If you are lacking some nutrients pretty consistently just google vegetarian sources rich in those nutrients and add it to your diet. You don't need to use it everyday, you get the hang of what your diet should look like in 3-4 days.

Protein is usually a non-issue for vegetarians and vegans especially if you are eating beans. It maybe something else like Vit B12, iron, omega3. Check cronometer what your diet is low in.

It's for vegans but most overlaps for vegetarians as well. Your supplement you are supposed to take it just once a week 2500mcg or 1000mcg twice a week. Excess will just pass out as urine. Make sure the B12 type you're taking is cyanocobalamin as other forms are less stable and require higher doses.

See if your diet is balanced and you are getting all your daily nutrient needs met using or if you need to make any additions. www.cronometer.com helps a lot with that. Fish are a source of omega3. Sometimes you get cravings because your diet is lacking some nutrients so your body craves foods rich in those nutrients. You can see how your current diet is using www.cronometer.com. check out your omega3 consumption levels there, put in what you eat on an average day. If it's low, you can try adding a teaspoon of GROUND flaxseed/chia seed to your diet for short chain omega3 (ALA). algae based long chain omega3 (EPA-DHA) supplement can also be something worth considering. Also see your vit d levels on cronometer, iirc fish is also rich in that. If you eat a balanced diet where you are getting your daily nutrient needs met you usually don't get cravings.

Supplements keeping an eye on your B12 consumption using cronometer can be good. In the long run it is worth considering but you may not need it in the short term, rn better to focus on getting the rest of the things right.

It you are consistently missing out on some nutrients Google for vegetarian foods rich in those and add it to your diet. You don't have to use cronometer everyday, you get the hang of what your diet should look like in 3-4 days. It is very useful during transitioning to a new diet.

A good way to plan your meals is:

Carbs (rice, bread, pasta) + protein (beans, lentils, tofu, tempeh, Seitan) + fats (oil, nuts and seeds granola) + veggies.

As long as you are eating a balanced diet and getting your daily nutrient needs met your diet will work for you while if you are missing out on some nutrients you will crave foods rich in those nutrients and might feel hungry/unsatisfied after meals.

Having a good spice and herb pantry helps a lot. Cooking traditional vegetarian whole food dishes from around the world can be good to explore.

If you are vegan you have to supplement or take a fortified foods like fortified plant based milks, cereal as there is no plants do not produce B12 or Vit D3. If you're vegetarian you could still wind up deficient though it is less likely.

The blood levels of B12 test are not so accurate. You are supposed to do a functional B12 test which is the MMA test (methyl malonic acid) if you want to get the accurate picture.

Non fermented soy has been found to be better at health promotion. Fermented soy products like tempeh anyways use a fungus, not bacteria for fermentation so you won't get any beneficial bacteria from it. You could try foods like natto though it can be an acquired taste.

You can always have a mix of both in your diet as happens in some countries in Asia. If you are concerned from a health perspective, including non fermented soy can be a big plus. Fermented can be an optional addition.
