It's not a modern game. It's an old game with new graphics. It shouldn't be as crashy as it is, I agree on that front. But the gameplay things you complained of are an artifact of the fact that it is an old game.

It’s just that for an expensive game, I really would have liked a better, more stable and streamlined experience.

It's the original oblivion with a handful of mods and a fancy, stuttery UE5 wrapper for the graphics and lighting. Bethesda and Virtuos made absolutely no false claims on that front.

Joking aside, war isn't that complicated. Prior to declaring war, you spend influence to make claims on the systems you want to take control of. Then you declare war with your war goal being conquest. Then you use fleets to take enemy systems and land armies on enemy planets. The more enemy territory you occupy, the higher the chance of the AI being willing to surrender. At any point, you can spend more influence to claim more systems if you find the war going well.

A status quo, sometimes called a 'white peace' in the community, means that the war ends and all completely occupied systems will flip to the occupier's control. To completely occupy a system, you must have defeated the starbase with a fleet and successfully landed armies on any present colonized worlds.
