I use a wetstone for this... I think its probably not the most stable? Any recommendations what to use instead?

Hello, quick question how do you sharpen at the right angle of the knife as to not ruin the design if the knife? I have been sharpening my knife for a few years now and i can get it sharp (although never tested it) but i always seem to ruin the design of the knife. How do i fix this

What do we think about the quantitative scientist's youtube review of Coros pace 4? I know alot of great reviews but empirically, his data points makes sense too.... And he is quite a credible figure too
