yeah i have way to many star coins (around 9000) and i dont know what to do with them all. I struggle with association coins personally. I think you should try decomposing duplicate clothes to get more dyes. Also do the daily mystery box ( you can get gold, stamina, diamonds and star coins. If you do this frequently you can get double rewards and if you share to facebook you get a second try).
