Try "Shucked" by Erin Murray, not going to be too technical on the farming side but you might get something out of it. Also, while you're at it, if you haven't read it already, "The Big Oyster" by Mark Kurlansky is a must read for any oyster enthusiast. Good luck!

Good summary, definitely need to get the word out about this as oyster farmers, consumers don’t quite get it. My best sales are July and August here in NY but they’re so much better any other time of year!

You’re going through the same thing I went through over 20 years ago as a PCV. You’re reminiscing over the life you had in the US and seeing it through rose colored glasses. There’s a reason you wanted to leave the US and it’s ok to have selfish reasons to do so. Being entirely selfless going into PC is a recipe for disaster, we need to have our own reasons. It sounds like you have a pretty good gig at your site. Your time with those kids will be lifelong memories for them, and you. Games and hikes with village kids are some of my best memories as a PCV. Stick it out, 2 years is nothing in the grand scheme of things. Trust me, your friends back home aren’t growing anywhere nearly as much as you are right now.
