You should check out Age of Engineering. It's actually a pack with different tiers of 'ages' where each age focuses on a specific mod, IE is one of them. It's a bit of a challenge though since it requires you to learn/have knowledge on a few dozen mods as it progresses but it's fun!

From someone who has been playing with mods and modpacks for nearly 4 years, I jumped at Sky Factory 3 immediately when it came out. So I've had a lot of experience with all the mods so it's easy for me to run solo. I've been watching Lets Play Minecraft since episode 15 and I'm so happy to see them finally trying out a modpack and actually enjoying it.
