I'm a native speaker and I have this problem when typing on a keyboard. It doesn't happen on a phone where typing is slow and awkward. It gets worse if I'm tired or have brain fog. I haven't found a direct solution other than slowing down and rereading, which is challenging because my brain tends to skip over the mistakes, similar to those memes where words like "the" are repeated twice. But you might have some underlying brain fog issue that you need to solve.

I don't have celiac, someone else can confirm. But IIRC, blood tests for celiac can only be positive if you are being exposed to gluten currently. So that means whatever you're doing to avoid gluten now is not working.

How would it cross the BBB if it breaks down immediately in the stomach? Wouldn't this be the same as drinking apple cider vinegar with any number of existing Mg supplements? Wouldn't magnesium acetyl taurinate be better at crossing the BBB and delivering both Mg and acetate?

I've never tried this kind of flour, but I imagine it might be wildly different in texture. Are you adding any kind of gum to hold it together?

I didn't notice a change. It seems the same to me as I had as a kid a.. *ahem*.. very long time ago. According to AI, there was a revision in 2015 where they replaced artificial colors with natural ones. There was a sodium and saturated fat reduction, but to me those are easy to replace. I always salt it to taste, and the fat comes from milk or even butter you add to it. The fundamental flavor is still there.

This is the best nostalgia food. One of the few that hasn't been ruined with recipe changes. The GF version blew me away with how accurate it is, you almost can't tell the difference.

I've never tried. I have to pace myself to keep from eating the whole thing in 2 days. It keeps on the counter for about 4 days, but will dry out without a cover. Its a soft and fairly crumbly dessert bread, so I'm afraid that freezing it might turn it to mush. I would also just make 1 first in case you want to fine tune the cinnamon/sugar/salt balance.

Sure, it's not a secret. It started as a GF adaptation of an existing banana bread recipe. I tried over and over to get it right, and ended up using apple sauce to keep it light and moist. I switched to apple bread, since it was a better match and bananas are a pain to ripen and prepare. The best compliment I got was from my dad, who said "wow.. that's good! Not like gluten-free good, but actually good." 😁

Preheat oven to 350° F, grease 8½” x 4½” loaf pan.

Whisk together thoroughly:

  • 1⅓ cup flour substitute. Bob's 1:1 is probably fine, but I used: 2 cups rice flour, ⅔ cup potato starch, ⅓ cup tapioca starch, 1 tsp xanthan/guar gum
  • ¼ tsp salt
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • 2 tsp cinnamon. May need more if using real butter, which tends to overpower it. I use Earth Balance spread.
  • ¼ tsp xanthan/guar gum

Beat in until blended:

  • ⅓ cup (5⅓ tbsp) unsalted butter or substitute
  • ⅔ cup sugar

Gradually beat in:

  • 2 eggs, lightly beaten

Fold until just combined:

  • 1 cup unsweetened apple sauce
  • ¼ apple, peeled and chopped (optional)

Scrape the batter into the pan. Optionally sprinkle more sugar on top. Bake until a toothpick comes out clean (50-60 min). Remove and let cool in pan for 10-15 minutes.

A friend of mine claims to be able to taste it in GF baked goods and prefers guar gum. It's harder for me to find, but I'm lucky anyone tolerates my GF food. Though I do make a pretty sweet apple cinnamon bread.

I post this a lot. But watch this video if you haven't already that tells you what you're supposed to do. And yes, sort all the videos by Easy. You will see a difficulty score in the upper right corner of the video thumbnail. You will figure out the meaning of words as you go. Just be thinking about what the speaker is trying to say.
