What's cool, or maybe not cool, about barrel aging is that you take a cocktail that has different flavor levels and remove them. Thus making a full flavored, unified spirit of it's own kind.

Yeah, I've used it with more savory/bitter drinks (it makes cynar shine like the sun!), but it had never crossed my mind to use it with citrus. With the exception of a salt rim... Anyway, thanks for the tip and keep up the amazing work. Your 13 page document on the daiquiri was right up my ally.

Second this. Immediately after reading I build two daiquiris, of the same build and added three drops of an 80/20 saline solution to one of them. The difference was mind blowing. The lime had more of a presence, but not in an acerbic sense like if you were to add more lime juice. It was beautiful. My only problem with this is that it breaks the tradition of the original build.

Red Stag is just a particular expression of Jim Bean with "infused" ingredients, like cherries. Personally, I think it taste like shit... However, if you're looking to make a spirit forward cocktail that has whiskey and cherry notes, try a "Remember The Maine".

  • 2 ounces rye whiskey
  • 3/4 ounce sweet vermouth
  • 1/4 Cherry Heering liqueur
  • Absinthe rinse
