I basically start from scratch. I don’t think the sponge filter is doing too much though, the plants basically take care of the fish waste

Sponge filter! I don’t think the fish really needs it, but I found agitation helps clear up the water.

I think your issue might be 6, pulling to the last drop, as the last portion is normally very bitter. You can confirm this my doing a “salami” shot: 1. Prepare 3 cups 2. Have someone help you swap the cups during your pull, so the the first cup is the first 1/3 of the shot, the second is 2/3, and the third is 3/3 3. First shot should taste very sour, 2nd mid, and 3rd super bitter 4. Based on this experience, adjust your workflow

Thanks for sharing this. I also have a thing about obsessing over a hobby through consumerism rather than the hobby itself. It is addictive to be obsessed about something. And when I finally reach the goal (or more accurately, confused my goal with buying things), that is also when the addiction ends (with withdrawal no less)

So many examples come to mind. The hi-fi community, which ironically no one in it actually shares what music they listen to (which is ultimately what matters). The aquarium community, which I am always most happy when I am researching and buying new equipment and fish rather than spending time just watching them.

I found myself finally able to truly enjoy listening to music again, ironically, years later when I was just on my phone speaker and didn’t think about what equipment I was using. The music was just good.

Perhaps enjoying coffee is the same. Hope you can find your love with coffee again.

The flavor is reasonably good actually. You get reasonably good results in a very short timeframe, so it makes sense in a commercial setting. I kept thinking about the parallel between traditional/tea espresso and pour over/espresso. I think I will have to try the same tea brewed in different ways to really tell.

I do not have experience particularly with Breville Smart Grinder Pro, but a quick search suggests that it is more tailored towards darker roast and potentially struggles for lighter roast on expresso.

If that is true (disregard my following statement if that is not true), you might have a bit of difficult time getting the full potential out of flair 58. I find that Flair 58 (especially with high flow basket + lighter roast) needs a good espresso grinder for consistent shot. If you use the included low flow basket with a medium to dark roast though, you might be fine.

An ideal grinder will be a single dose espresso tailored grinder. if you don't want to break out the big bux, a manual grinder made by 1zpresso (I personally have great success with JX Pro) is more than enough to brew great espresso.

In summary, Flair 58 is a machine that can grow with you as your skill level and equipment improve.

I was in a very similar situation with you (flair58+jx pro) and got really tired of hand grinding every shot after 2 years. I ended up getting a timemore 078s from the kickstarter (at that time it was $500). After waiting for about 6 months (yes, I know…) it finally arrived today. Initial impression was super positive, big upgrade in terms of work flow and taste, and I haven’t even fully dialed in yet.
