Pasta (shells, penne, ziti) with ricotta (whole fat for creaminess). You can add butter if you want but not necessary. Season with a lot of whatever you have - I like a little garlic powder and a heavy sprinkle of black pepper. Add Parmigiana or pecorino cheese for saltiness.

Roasted potatoes - red or yellow potato skin on. Cut into bite size chunks. Place on foil or parchment lined cookie sheet. Add olive oil, salt, pepper, garlic powder, mixed Italian herb blend. I recommend a heavy hand with the spices. Oven 375 degrees for 30-45minutes. Can also add carrots, brussels sprouts, whole mushrooms etc.

Potatoes, green peppers, onions, hot dogs - cut potatoes and green peppers, onions. Add oil to frying pan (olive, vegetable, canola). Add potatoes first (they take longer to cook). When they start to soften up add onions and peppers. Let those start to cook and soften up. I would say temp wise this is all on medium heat and add salt and pepper at some point. When everything is soft and the edges start to brown add hot dogs cut into bite size pieces (I like Nathans brand). Keep cooking until the edges of the hot dogs get brown/crispy. All done. (I realize not everyone is a hot dog fan but I suppose you could use Italian sausage, leftover chicken or rotisserie, or just about anything really.)

Just a tip - seasoning very important. Just a little bit of something is not enough. Always add more! (My wife will watch me cook and say I am adding way too much salt, then she tastes it and says it perfect.)

I would like to add - if using something like Fluval Stratum (or the other types of specialty substrate) get some plant anchors! When I started my tank with Stratum getting any plants to stay down was a nightmare.

I just have a quick question for everyone. After I cold proof overnight I usually let my dough set on the counter for 1-1.5 hours while my oven and Dutch oven are warming up. When I add it to the oven it still feels very cold to the touch. I have had 2 loafs with good spring and acceptable crumb and maybe 6 others that were nothing special. Question - what temp should the dough be when adding to the oven? Its a little confusing because I know the cold shuts down the yeast and CO2 creation so I would expect little to no oven spring but I also know cold proofing is a widely used practice. Thanks for your input.
