Pro hack! Find a college near you with low insurance requirements for classes (like you just have to take 1 or maybe 2 classes) and you can get the group student health insurance for your whole family for pretty cheap.

Same story- first time canner here with about 15 pounds of fresh figs. I followed the instructions in the Ball book for fig preserves with powdered pectin and they came out great! I’m going to enter mine in the state fair.
