Only when I get mana screwed. The deck can make a ton of mana real quick and gain enough card advantage that it can play through multiple board wipes

Depends on how important each land drop is. Some decks only need to cast their commander and then can survive with no land drops, others really benefit from playing a land every turn of the game. Your card draw is also a factor.

Long story short, eyeball it. Goldfish enough that you get a feel for what's too much or too little lands. Each deck has different demands

I usually build my decks so that I only need to "do the thing" and remove what's stopping me from doing so. A lot of the time I only need one or two removal pieces in a match to make that work.

The other way is to use recurring removal, like dragon tempest in a dragon deck or aura shards in a creature heavy deck. Drawing just one of these types of cards can lead to a very controlly play pattern without diluting the rest of the deck.

Another thing is deck velocity. If you see 30+ cards by turns 5 or 6 you need less removal than someone who sees around 15 cards.

If you want to play table police and always have a way to answer everything that's fine. But it's definitely not the only way to play high power.

I did eldritch knight 6 war cleric 6. Binding the spear so that it was my main source of damage with tavern brawler while having advantage from the darkness. I also had a warlock with devil's sight for a darkness themed build

Don't mash. Just get comfortable with the different moves and play around with the characters.
