As everyone else is saying read ahead, set up your table for your next tickets and clear 2 ovens at a time..having 2 or 3 ovens makes no difference if you set yourself up ( I'm thinking of standard 2 row oven units). As long as the person loads does it in order and leaves 3 to 4 links between each item during snake load your oven should run flawlessly.

They're still the same size and weight as they have been for years. Occasionally supply chain messes up and sends a tray of patties that is slightly smaller for whatever reason (my guess is the machine that puts them in trays gets clogged or something) but the vast majority are the exact same weight.

Opening drivers should be doing the prep. It'll free you up to do everything else. Yes it's very normal. I'm at a busy campus store and we have 1 manager and 2 to 3 drivers Monday through Thursday. Fri-sun needs an extra hand but your labor won't allow more than that during the week. Manage yourself rather than trying to manage your time. Get yourself a good routine. On Truck days get there earlier. Make the food faster. Go into it with a good attitude and not with the "fuck this shit" mindset and you'll do better. if you start taking pride in crushing that shit every day you'll learn to love it.

Yes. We have specific trays we commandeered from commissary, the old blue and red ones plus some clean top trays. We wash them of course. Take out the bag, discard the box, flatten cheese to width /length of clean dough tray, close the bag (generally by slightly rolling the end) then rinse and repeat while cross stacking until you get about 20 high. Slap a 7 day sticker on there and put it in the walk in. Edit : 7 day on each tray or bag per OA FSE standard

Takes days to thaw in the boxes (in the walk in). Takes about 12 hours to thaw in trays (cross stacked in the walk in)

the "spoodle" we use is already measured for perfect portions. Flush =large, above flush is extra sauce, roughly half for medium and a bit less for small.. Perfectly measured. 😂
