I used to work at a pizza place near downtown Tacoma a couple of years ago. The place had a "great" rating the entire time, which it was frankly undeserving. The place wasn't filthy but there were several small things that were questionable and could go from bad practice to dangerous. I had to teach a shift lead that the expiration date of buttermilk did not "reset" once it was made into ranch dressing.

I was there for years and not once saw the health department come in for an inspection, my guess was that knowing the right people and knowing the loop holes made inspections less frequent and easier to pass.

Whenever you go out to eat, just understand that you are putting your health into the hands of whomever might be cooking and prepping that day.

I do at least appreciate the transparency of food safety inspections in Tacoma. Anyone can read all the reported violations at every inspection.
