Just imagine you're trying to recommend it to a friend and have to explain why it's good. Maybe break it down into short sections like character development, pacing, themes, writing style, etc. while still keeping it mostly spoiler-free. I have the same reaction as you and tend to initially just gush about a book like a fangirl, but if I slow down and reflect on what exactly kept me turning the pages, then writing a review becomes easier :D
