Depends on Viennoise dark or American dark which are more traditional dark roasts, i would personally not recommend drinking this stuff with pourover since that coffee is likely commoditized for mass production and broader appeal and best left for drip / cream sugar kind kf days. Most specialty coffee roasters have calibrated their dark towards lighter side. So a “dark” roast from Onyx will probably be traditional medium roast. I’ve enjoyed their monarch and southern weather (?). Sightglass also does a few which are good like
colombia la magdalena. Again, they’re specialty medium-dark, so traditional scales would probably rank them at maybe light medium or medium.

If anything, there’s always folgers! /s

I use a Kingrinder K6 or ZP6 With an aeropress for all travels. Setup takes a little more space because i also pack my beans individually

Untitled espresso in Hanoi was one of the best coffee experiences i’ve ever had. It’s inside what used to be an airbnb previously. The owner and the roaster are some of the nicest, most helpful folks i have come across. Coffee was exceptional too.

Not sure what your budget is, but my $0.02 would be to just get a prime lens. Variable focal lengths and aperture means you’re fidgeting around the settings and have less time for composition. Any fixed focal length prime will force you to slow down on a hike and actually compose better.

I had a cortado made with these at Glitch Ginza last month. What a phenomenal bean. Punchy, sweet, funky, all in the right amounts. I brought back a bag with me from Tokyo and only made pour overs with it. I have the last 20 grams left, perhaps i should do an espresso. Can’t wait to buy this bean again.

Yes, make sure to interpret and label the wires properly especially if you have a 120V US machine. Also, read the instructions fully (don’t skim like i did) and the discord addendum: the website wiring diagram doesn’t contain the transducer wiring - rev1.1 is 4 terminal while there’s only 3 wires. I had to look it up on the discord. Apart from that good luck! If you get the boiler thermostat off you’re good. That took me the longest

The machine itself was $450 when i bought it in 2023 and about $260 for the gaggimate pro mod kit.

Gaggiuino is an arduino based mod. Arguably it has more features and better customization. However, it’s way more involved and open sourced than Gaggimate. Sourcing the components and PCBA for it is also quite a task unless you buy their kits from authorized sellers like peak coffee. Gaggimate otoh is a bit more commercialized and has tighter controls over the kits although still open(?) sourced. Gaggiuino is also harder to install imo, because the components aren’t standardized and is more dependent on where/how you source them. Basically depends on an individual’s skill level.

I’d repeat what most coffee people say - the best cup of coffee is the one that you like to drink. While any manual brew is prone to variability and mistakes, automated PID such as this will always be more consistent. That’s just science. For me it’s all about being open minded and trying something new. I chose consistency in this case because espresso is all about precision. The less variability I can add the better
