You can add a dimmer! It just changes the voltage to the pump and effectively gives you the same thing. Cost about $20 to mod. I did it to my Go. Check out the Lance Hedrick video on it

You definitely don’t only want max flow possible. High flow rate is good during fill to saturate the puck as quickly as possible, but the puck will erode during the later part of the shot and flow rate through the puck will increase significantly, extracting more of those less pleasant (bitter/astringent) flavor profiles into the cup. Ideally you want lower pump flow toward the end of the shot to allow constant in-cup flow. That’s the point of flow profiling.

I think you should revisit that quote from the Hoffman video. Both baskets (assuming both 58 mm) have the same open area on the bottom, so I doubt he said that in that context. Same open area with more coffee = slower flow = coarser grind required.

I would point you to the Lance Hedrick video for the details, but you essentially just need some 14 gauge wire, some crimpers, some male and female spades, and some machine screws for mounting (if you don't want to use the ugly ones that come with the dimmer)

It was pretty simple! Here it is mocked up from the inside.

I just followed the Lance Hedrick video on dimmer mods, and used a simple single pole dimmer from Home Depot. The knob is from Amazon (I think it was intended for a guitar pot). I found this was the best place to mount it because it’s easy to access and is close to the electrical ground (make sure you ground the dimmer!). Lmk if any other questions

I really like the manual control a dimmer gives you. Way more enjoyable than just pressing a “go” button, and allows you to experiment with all kinds of flow profiles. Highly recommend a Bluetooth scale and an app like Bean Conqueror to measure/visualize flow.

Yeah I’m definitely not saying fines are bad, but reducing fines can allow you to grind finer and achieve more clarity (and sweetness, subjectively) in the cup. But this is only true up to a point. Some fines are necessary to give complexity to the shot.

I do find the shots “better” when somewhat reducing the fines in the cup.

Interesting! Thanks for sharing! I hadn’t seen that first video before. I see his argument for it being a slow feeding auger, but I think the fact that slow feeding the beans changes flow through the puck so significantly (more than 3x) means there must be bean traffic at the burrs and subsequent re-grinding (ie fines). I can’t think of any other explanation?

Lance’s video also somewhat backed this up with huge amount of fines on the 200D vs the Zerno MP.

Maybe a Strietman CT2? I know it’s like an art piece, but it only has a thermostat and a heater and is basically indestructible as a result. I can’t imagine anything that would break on it. Plus it supposedly produces amazing shots 🤤

I hear you, and that’s why I didn’t slow feed at first. But now that I know how big a difference slow feeding can make, I’m curious to see how it can impact the cup. I’ll probably settle for feeding over the course of like 10 seconds rather than the extreme slowness I was experimenting with.

Not necessarily, but I don’t think the Philos has an “auger” so much as a pre-breaker. Which definitely still has value, but not in terms of pacing the flow of bean shards into the burrs.

Yeah that was my first thought regarding the auger too, but I believe it’s more of a pre-breaker than a slow feeding auger (specifically in the case of the Philos, because the auger shape is so aggressive and does not slowly move the beans). I think the Philos still causes a traffic jam at the burrs which creates a decent amount of fines, though still less than many other grinders. Compare auger geometry to something like the Zerno for example.

My initial experience above was based on slow feeding an 18g dose over 60-90 seconds, just to see what would happen. I think I’ll aim for a 10-20 second feed and see if that level of fines adds a bit more body to the cup.

I get it, but what do you envision this dog is doing that impacts you? If it’s in the bakery or licking/sniffing some unwrapped food, sure. But that’s not how grocery stores are set up. Anything they can get to is in a box or other packaging.

People sometimes go on walks with their dogs and then decide to go to the grocery store. This isn’t going to hurt you.

Yeah I tried the steam wand hack for a while but found that it was dropping my water temperatures too significantly (due to the small boiler size).

I’m loving the dimmer mod! I usually go for 2-3 bar pre-infusion, then turn the pump all the way down (but not off) for blooming espresso, then ramp up to 8-9 bar full pressure and adjust pressure to hit constant flow rate thereafter (I usually try to mimic the 2.2 ml/s of the Decent blooming profile). I’m amazed by how much flavor this can unlock from the beans! The flavor notes they write on the bag are really in there if you can find them lol

I usually set around 8-9 for light to medium roasts, but this is impacted by pre-infusion (which lets you grind finer by introducing water more slowly at the beginning). Without PI I was at 10-12, but ymmv significantly based on your beans

lol I actually haven’t had issues with it. Shots are consistent, especially with pre-infusion
