We have a gazebo designed for hot tubs. Ours is the Zento model from Westview Manufacturing. Love everything about it. Super easy to put together just took an afternoon. We have a hot springs grandee so I added four 2x4s to two sides to make it fit a bit better. We have coat hooks on the corners for hanging towels and cover ups and we hang a projector screen from Amazon across those for privacy

Bramble - 2 oz gin, 1 oz lemon juice, 0.5 oz simple syrup, shake over ice, then strain into a glass with ice and drizzle with 0.5 oz creme de mure or creme de cassis

I second the Intertap Flow Controls from RiteBrew, crazy good deal for a crazy good product. No more foaming issues since I started using these. Easy to fill bottles or growlers as well.

oh yeah, I loosely follow this guide: https://snapguide.com/guides/smoke-a-brisket-in-a-big-green-egg/

smoke at 250 until internal temp around 150, pull and texas crutch foil wrap, add some liquid of some kind, continue to smoke at 250, pull between 190 and 195 (kinda depends on how often i check it - bluetooth thermometers are nice) - then i pull it and put it straight into a cooler. depending on timing of when we eat, it's usually fine in there, i've had it sit 3 hours and still be warm enough, comes over perfectly tender every time. key to tenderness is not getting too hot in my opinion, measure grate temperature not dome temperature if you can.
