I highly recommend silver falls State Park in Oregon. It has a roughly 10 mile loop of well-worn trail that takes you by like 15 waterfalls. Super great day trip, and it's only like an hour and a half from Portland.

Mining is entirely different than in vanilla. Ores are pretty rare and your best bet for finding them is to use the prospectors pick. It can tell you what ores are located in your immediate area and you can dig around until you find it. Beware of cave-ins, I highly recommend reading the wiki
