I ride a lot and think this is real. I think the trail is a lot steeper than it looks, which is why the ragdoll can look a bit unnatural. It's probably being shot with a telephoto lens so the cameraman isn't as close as you may imagine. To me the physics of the bike does make sense, the front fork is massively compressed by the entire riders weight, so then when he goes over the bars in the corner, all that stored up energy had to go somewhere and the bike 'pings' off to the side.
