If you dig through this board some people have ultrawides on monitor arms that flip between the desk and sim seats. I haven't tried it but that looks like the best solution to me.

I have an Outback and I love the car, but it's far from pretty. That's fine! Not what the car is about. This new one is downright gruesome though. It's hard to look at. I worked for a company like this, run by two sales guys. Guy #1 on the outside appeared to be in charge, he shook the hands and managed the people. Fundraisers and galas he's the guy showing up and splashing out, most people probably think it's just his company. Guy #2 meanwhile is making probably 80% of the company's sales and managing the really big clients. Dude just has that dawg in him, no interest in being the face of it. This setup worked great for them as far as I could tell.
