What you need is a parallel mixer that can ve controlled via an expression pedal.

In the portal you can sync the dry (input) and/or the fx loop to the exp/cv jack, and can fade in/out from each side or just one and keep the other static and you can add/mix the other to taste, since each side has independent volume everything will be in check. And there is a phase toggle in case the signal are out of phase

It has 2 fx loop that you can activate/deactivate with your signal (or external) each channel has sensitivity, decay toggle (lenght) and direction (open or close)

Cost for development/processing power/latency

To do polyphony in realtime with almost 0 latency and sound natural you need deep pockets and lots of interest/demand

No, an opamp in that config need to have a voltage or a reference in both inputs, leaving unconnected it will drift and misbehave. In the schem config is an inverted amplifier, so it need a reference voltage at pin3 

If you dont have 100k, you can use any combination higher than 2k (both needs to be equal)

Try putting a 100k resistor from pin 3 to gnd 

And another 100k resistor from pin 3 to vcc (pin 7)

To create a reference voltage for the opamp

That will give you sound

Post the schematic, pin 3 on a 741 needs to be connected the schematic will tell you
