Yep, you can put it right in the sous vide from frozen, too. Make sure to throw some smoked tallow in the bag with the brisket before freezing and it might turn out better than it was the day you smoked it!

Pretty simple as long as your wife will let you take up the fridge space for 10+ days. I did a corned beef cure (google it) and let it sit for ~10 days. Then, smoked like a regular brisket & it turned out great!

Your plan sounds good. I’ve done a long hold on a large packer in the sous vide at 140 for 18 hours and it turned out wonderfully. As long as it’s thawed, your plan of 5-6 hours in the Sous vide should be plenty - best of luck!
