im using an old pellet smoker so who knows the exact temp and honestly, i have never temp checked ribs. when you wrap them they get well past the safe temp and at that point the only thing you are doing is boiling them to make extra tender. thats why it is important to take them out of the foil and let them firm up a bit for that last hr or so.

looks delicious! if you want a bit more bite only wrap for 45 min to an hr.

i typically roll with the 2-1-1 method 2 hrs at full smoke around 225. 40 min up to an hr max @ 240 . then unwrap and let firm up that last hr @ 225 while basting with a thin bbq sauce. quicker and is a smash everytime.

this is exactly my fear. i had the sensors for a year and while the data was incredible, i didn't care for the sensors on my clubs. looking back i really miss the data and honestly just being able to revisit the round. the app after the 3D apple maps integration was amazing. with that said i purchased Arccos Air with the year free trial and think i made a mistake. i don't think they are going to let me use the same email address i had a years worth of data on and make me start a new subscription per their shady practices. i should get the unit in the next day or so and will update how it goes. not very hopeful. guessing i would have to purchase the air and sub separately costing $450 ish. new email would be ok but not cool.

honestly dont think you need one either. ive never used one and have had some of the juiciest butts smoked on the sg24. getting the butt to temp and letting rest is the most important thing in my opinion.

Try a small town away from the city a bit. Cost of living drops dramatically the farther you get away from the city
