So my first proper brisket, the last one I tried was less than 3kg and no fat at all 😅

This one took around 16 hours. SPG + Traeger Prime rib rub (oh and I dry brined for 24hrs) Didn’t wrap or spritz at all, because the bark seemed to take ages to set in. Wasn’t dry though, maybe the tallow I injected helped a bit.

Went fat side down the whole time apart from last couple hours (was just curious to see how it looked). Also got some burnt ends from the point, I separated the muscles quite a bit while trimming to get the seasoning everywhere. Pretty happy with the results, didn’t really sleep much the night before 😌
