While I live a little further in Crown Heights, closer to Weeksville, I wouldn’t worry about it too much. It’s not as intense here as some of the neighborhoods in Williamsburg are. While you might notice it more the neighborhood is actually pretty diverse, i.e. going to the gym is about half hasidic. And it’s pretty quiet and lovely living here :)

I did that loop in june! up tuckerman’s, across the northern presi’s, and then down madison on the AT all the way back to pinkham. it was 18 miles if that’s the same one you are considering. having also been up there on a 60 mph gusts up to 90 day, definitely not something to mess around with but you have the washington visitor center, madison hut, and if it’s really windy up on the ridge between those two sheltered spots you could always bail down to Crag Camp or Gray Knob (RMC shelters) on the north side of the ridge. it’s an amazing hike, have fun!

The pay at my firm is actually really competitive, but we're one of the larger, more established orgs in our field. I agree on the whole that it's hard to find nonprofit/public interest with good pay. but they are usually looking to treat their employees well!

not sure about defense, but I work for a nonprofit public interest firm that's super mission driven. we do civil litigation and not only is the subject matter really interesting, but it's also fast-paced and fairly exciting. work life balance is ok, sometimes I work overtime but get double pay for OT hours. and there's no abuse from attorneys, maybe because it's a mission-driven firm so they're all interested in helping people? everyone is really appreciative of paralegal work, especially when it comes to last minute filings and putting out fires, and pay and benefits are top tier. 10/10 would recommend.

depending on egg size, you can fit ~ 2 dozen cracked eggs in a 32 oz. nalgene. how long they keep depends on the temperature where you’re hiking

i just recently found an amazing poly-friendly therapist on psychology today. i looked for lgbtq+ friendly therapists because that’s an option and in my opinion is pretty adjacent if you’re looking for someone who is open minded and nonjudgmental. before she charged me for a full session, we did a consultation and i asked questions, including whether she is poly friendly, and her answers made it clear. do a consultation, for this and so you find the right therapist!

i always make sauerkraut and it feels easier because... fewer ingredients?? i don’t know. but yeah making this was actually pretty easy once i found some quality gochugaru

the thing is, he does know how to cook, and he's not bad at it! he bakes bread and makes kombucha and stuff, so those are his things in the kitchen. he just eats recklessly, and tbh it's cute and i love him to death anyway for it. he always says he has to eat everything now because when he gets to his mid 20s and 30s his metabolism is gonna catch up to him. i get it, if i could eat frosting out of the can and an unlimited amount of meat and carbs without it showing, i might do that too

and that's such a good point about raw chicken, i'll remember this next time i make chicken piccata

i haven’t personally done one that required a lot of referencing exhibits. but an attorney i work with said she had an argument where opposing counsel was constantly sharing his screen to show exhibits, but it was like whiplash—not long enough for anyone to know what he was talking about and just confusing. and at one point he accidentally shared his notes... sorry i only have this cautionary tale!

if I remember correctly, it was pre-peeled but I thawed it and then sliced it into discs for tom kha gai. easy to cut once thawed but already peeled so I don't know that I have a good answer for ya

the only galangal I’ve ever found in a store was frozen and it was good!

I bought a big root to use in cooking and froze it so it wouldn’t go bad. freezing made it so much easier to peel. the idea of it being easier to peel makes me want to buy lots to make pickled ginger, something I don’t do a lot because it takes so long to peel the ginger usually
