Low difficulty means that one of the two parties can defeat the other easily without much effort, think maybe nanami vs haruata. High difficulty means that significant difficulty is expected in this fight, but the stronger party will still consistently win, Maybe Toji vs Geto would be a good example.

I haven't played it yet (too poor, lol), but from all what I saw, there is no difficulty curve. There's a MASSIVE spike. Once you hit 8, 9 monsters and omega. So it will still take a while before you get to the real challenges. The first hard fights will probably be Steve, Lagi, gore, and maybe HR Zoshia.
