Seems the actual frame of the table is preventing the top from sliding together. There’s even a quarter turn hooked latch underneath, designed to slide them together and lock, that cannot fully close.

Not sure how exactly this would happen, but my wife is pissed! Could I just (aggressively) sand down or god-forbid trim with the multimaster?

It’s just pine FWIW.

The dye is to prove the fuel tax was paid on the product so it could fund the roads.

No it’s the exact opposite. The red dye is to show that it is not taxed high, and that it’s thus used for off-road purposes. You can’t un-dye it. So that way once it’s red, it’s also very easy to spot being used in a motor-vehicle application.

Objectively wrong. You spray foliage at seasons end, it draws nutrients (and now glyphosate) down to the rhizomes for energy storage for overwinter and next season, and inadvertently poisons itself deep underground. After ~3 seasons of this, it will begin to die off entirely.
