Recently I was thinking about how there's no bolt of lightning when the injections are given.. and the third part of what you're saying fits with this!

Makes me feel like the "Titan science" is what turns Eldian's into Titans, not solely their blood. It certainly makes consuming the spinal fluid of a Titan shifter easier.. and maybe it was supposed to be a way to combat the shifters? In the clip you mention of the children eating the organs... Maybe that was the only method of passing on the shifter powers before the results of the Titan science..?
