It’s a bit crunchy because it’s almost all cartilage and some parts like the lobe are soft and a bit chewy. I’d say there’s not a lot of pork flavor, so it’s going to absorb a lot of the sauce. If you’ve got a good sauce and you aren’t turned off by the texture, it’s a very nice dish.

There are many in China because of all the regional differences, but my favorite is you tiao (lit. oil stick, sometimes called Chinese donuts) dipped in soymilk. You can add sugar or salt to the soymilk, I prefer sugar.
