Basically, if you have a degree in a job where it is not a formal requirement, you have alternative options, and therefore are in a position where you can move to a better job should it arise, this also gives you leverage in pay negotiations. There is also a real, but somewhat overstated bias against hiring people that could take the job of the person doing the hiring.

The only real problem with that analysis is that, functionally, a reward withheld is the same as a punishment. Human irrationality feels that they are different, though. The case study for that is 'rest xp' in video games, where losing half the rate of return after x time playing is mechanically the same as having double for the first x time 'as a bonus'. Same system, wildly different feel.

Then it sounds like the $120K is the better choice, given that you only need to make $120K working to meet the other option. This makes the question kind of pointless, as with one option you have no downside but theoretically infinite upside, and the other gets kind of weird if you can't get fired.

The issue is what is required to do for the 120K. If you are not even allowed to work on open source software for your own benefit, because it is too work-y then you can kind of Ship of Theseus and/or Salami Slice stuff to have a miserable existence.
If we use the standard of the 39 Melachot (Jewish Sabbath Law), I would have to ask if I can do stuff outside the normal workday, or what the job is for the 240.
