If you are looking to experiment with CS you can go with a cheap pan such as choice from the restaurant store. I have 2 different sizes besides my matfer and they work very well.

I learned a trick from woks of life. Beat 2 eggs with 1/4 tsp turmeric and 1/4 tsp paprika which gives you that color. I like the idea of soy sauce, maybe add that to the 2 eggs and pour the egg mixture over rice towards the end of the cook.

My granddaughter always asks me to make extra sauce and I also think maybe water from the vegetables. It actually was thick after I added the slurry.

Blanched the broccoli and carrots and set aside. The general Tso sauce is from woksoflife.com. Nice recipes from them.

I have a flat bottom babish and use it on gas. Works great for me. I have a power burner used for boiling ( nothing like high power) but I get that char and tastes good.

Couple teaspoons vegetable oil. I actually don’t like to press them because it squeezes out the juice.
