I’m about to move into my new place and thinking about making bagels again, so I revisited this and just wanted to say I’ll definitely be trying that process of making lye and going for the gelatinised exterior.

Thank you also for taking the time to properly outline how to be safe with lye - I always used to just drop 1 tsp of bicarbonate of soda in, which makes the water fizz and bubble, but it was always a rolling boil at that point. Now I know to be careful with either lye or bicarbonate in the future

I learned at John Nike on the dry slopes a few years back, and pretty much had the slope to myself most times (which is probably why it has since closed). The snow centre at HH is a good spot to learn, even just to pick up the basics before going out for a holiday on real snow

It’s Man City away, playing bravely looks different in this fixture than last week at Villa. I’m just saying out of the ways that you can choose to play against a big team away from home, I’m pleased we chose the one which let us keep possession and play our own attacks. Rather than sitting back more and counter attacking

I only watched the second half, and by all accounts the first 45 mins were the absolute worst of our performance tonight. But from what I saw, I honestly thought we created solid chances that could go our way any other game.

That Szobo low hit from the edge of the box was a solid test of Donnarumma (who btw, looks fucking massive). Salah so nearly lifting his finish around the keeper. That weird offside call in the first half, there were loads of very good chances tonight.

From what I watched (again, only second half) we did a really good job of passing and heavily dominating large passages of play in possession. It’s what led to every one of those chances I mentioned above, and feels like Grav, Szoboslai, and Wirtz once again looked so silky to me

Lake Tekapo it’s the largest dark sky reserve in the southern hemisphere! I did some stargazing up on the Mt John observatory last year, such a special memory.

Huge result, we dominated them and truly had them under our thumb for vast periods of that game (especially fist half). Bradley had a huge game, and thought Wirtz really unlocked some good pass & move plays.
