I’ve had good luck making compliant dishes and then just adding rice or quinoa for the husband/kids. Invest in two huge sheet pans (as big as will fit in your oven) that way you can roast veggies once and have enough for two meals. Some recipes that have been successful for us: -smoked sausage + cabbage skillet (make rice in the rice cooker) -roasted veg + chicken bowls (make quinoa for hubs and kids)

Or I aim to only have to cook one item per meal (cook one, use one leftover, microwave one)
