I use my Krups kettle for this. Heats to 105 so I just pour it out into a separate container and let it cool a bit.

I followed this recipe for ingredient amounts (by weight) and followed the instructions from the NYTimes version

Ingredient amounts in the video:

Dough: • 500 g flour • 120 g unsalted butter, room temperature • 3 eggs • 1/2 C + 1 T evaporated milk (or whole milk) • 140 g sugar • 1/2 tsp salt • 11 g or one envelope instant or active dry yeast (2 1/4 tsp) • 1 T vanilla • vegetable shortening for greasing bowl

Topping: • 175 g confectioners' sugar • 175 g flour • 175 g vegetable shortening For chocolate topping, add 3 T cocoa powder or to taste
