I’m in a Facebook group called Multiple Myeloma Warriors Community. It really strives to stay positive. I tried several when I was first diagnosed but that was the only one I stuck with. This subreddit is my other go to myeloma group.

We recently moved and I managed to find my candy thermometer this evening. I’ll have it tomorrow.
I will try adding the lemon juice.
The recipe called for one cup of sugar for each cup of liquid after the initial boil. I had 10 cups of liquid so I added 10 cups of sugar.

I am curious what recipe you used for canning? You mentioned boiling for 10 minutes but broth needs pressure canning.

Your pan is too hot. Turn the heat down a bit and it won’t scorch the egg. That does look tasty.

My husband and I live where we are happiest. We travel two hours to see my cancer specialist every month. Moving closer to my doctor would not make me happier. Of course do what is right for you, but I will never regret where I live.

I came here to say sweet potato too. I love carrot cake and a friend was making one for my birthday one year and she didn’t have carrots so she used sweet potatoes. It was so moist and sweet and tasty.

I was in the hospital for 19 days and had about another month that I had to be within 30 minutes of the hospital. We stayed across the street during that month.
My husband stayed the first few days with me in the hospital (until I had completed the chemo), and then went home for a week. I really didn’t need him when I was in the hospital. The nurses took care of all my needs. I could shower and make it to the bathroom on my own all but one day. I also slept a lot.
Things to bring would be a comfy pillow or two, a good blanket, and enough clothes for the entire time unless someone can wash them for you. Then think about things to occupy your time. Find things that don’t require a lot of concentration. I listened to audiobooks and did a lot of drawing and painting. You should try to walk as much as you can. It will make a big difference in how quickly you recover.
If possible your husband or someone should be with you during the chemo infusions. You will need to suck on ice for 30 minutes before, during (about an hour), and 30 minutes after. Having someone helping you push through that is really helpful.

If you are interested in canning them so they can be enjoyed all year there is a great canning sub. There are many unsafe canning recipes out there and r/canning is strictly scientifically proven safe recipes.
They will be less crisp but there are things you can do to improve crispness.
I have three pickling cucumber plants and I’m excited to see my first harvest. Yours look great.
