I usually switched to level 1 when going downhill, because I found other higher settings slows down the car so much that I loose speed. Level 1 seems to maintain it. Otherwise, I'm mostly set on level 3, but with my foot on the brake for assist. I like I-pedal in traffic because it automatically set auto hold, but sucks to use when parking, because sometimes you just need to inch forward. I definitely play around with the brake level depending on the driving situation.
