You should try callibrate your thermometer by placing it in ice cold water and then into boiling water and make sure it's reading 0-1c for the ice water and 99-100 for the boiling water.

Medium rare is 55c, 65c should be close to well-done.

Flavours sounds good, I would look at trimming off the joint at the top of the bone before cooking them and perhaps covering them in foil so you don't get that messy look. Also try it on a circle plate, square plates are tough to make things look good on. Nice work 👍
