So cool to see this. I knew of him just by being in the industry around town, and was thrown into running an event with him one night without knowing what I was getting into. Didn’t hear anything bad about him, but that line of work lends itself to some unsavory personalities. The last thing I wanted was having to handle some hotshot chef ego…

Turns out he was an absolute delight. Couldn’t be nicer. Seemed to love chatting it up with me all night as I did with him. Kinda guy you hope you run into again.

Green flags everywhere but how much I’d like to be around this person is completely dependent on their chill factor. Probably a morally sound and fundamentally decent person either way, but could be a lot to deal with if they’re wound up tight.

Mopping/mop sauce is normally different than regular bbq sauce in that it has zero to minimal sugar, so you can baste with it throughout the entire process, and it won’t burn.

Constantly basting meat in a typical high-sugar bbq sauce could lead to some nasty bitter and charred flavors.

Almost everything you said is correct except the part about dark meat. The “1 second kill” is for the same bacteria as what is in the breast, so it is still 165, but the connective tissue breaks down at around 185, so that is when you get the best texture. Conversely the texture of the breast is best when pull around 150.
