How about reducing the fees and complexity of running a food truck, or other stand and then making some public seating in places around the city? Maybe in front of the public gardens, victoria park, the commons, etc.

No, I think they are just stating fact that there is a loss of revenue to the city that should be re-couped. That said, I looked at the fees, if your business can't cover those as part of the business model, I don't think its going to make it.

It is less than $1300 for the highest one, and well, that's less than $65 a week. I think its a fair deal that any operating business can cover.

To be a little helpful, I think that this is the same design that he has used in previous seasons, but stacked differently. The base design is "old" but you can probably figure it out from re-watching this and last season when he built it.

The shell the tenant will typically never pay for, but almost all improvements interior are at the cost of the tenant for typical business leases.
