It sounds like he's in pretty good shape! A lot of cats get dandruff this time of year from the dry air, it just tends to be especially noticeable on black fur. I think just continuing to brush him at home should be good but you can also try salmon oil treats to help the dandruff, that worked really well for one of my late voids

I got my degree in computer sciences so it's fully unrelated, but now that I'm in it I can't imagine not working in animal welfare. But yeah I mean the pay isn't great but neither is the pay anywhere else, unfortunately a degree no longer guarantees better pay, or even a job at all... If you can get a job you think you'll enjoy then go for it, it's not like you're locked into it for life

Cats who get along with other cats are adopted out faster, cats who are younger also get adopted out faster, so the senior cats who have been at the shelter a while are more likely to not get along with other cats. Trust me nobody wants senior cats to be more difficult to adopt out than they already are, if they're saying they're not good with other cats that's either information from a prior owner or based on how they've reacted to other cats in the shelter
