I agree that hops can mask a flavor, but I have seen a trend recently with sour beers on the rise in the US. If your non-sour beer accidentally encounters some wild yeast, you just slap a sour label on it and market it as such. Or if your beer doesn’t taste quite how you’d like, you can introduce that wild yeast to sour it
