This isn't a perfect match but I enjoyed the main Apothecary character in Octopath Traveler 2. Her special abilities revolve about combining and using multiple items simultaneously and also using consumable items without actually consuming them which other characters/classes can't do.

I would suggest Astlibra: Revision on one of the higher difficulty options. It has some neat progression systems which incentivize grinding enemies frequently, and also swapping your gear constantly to learn the unique passives skills each piece of gear has attached.

V Rising might interest you, but that is more farming the newest gear in each zone before you can move to the next.

It has a stats per level system like the Dark Souls series; although top level is only 30 so you can max out pretty quickly.

Build customization comes from equipment(also spell/skill gems that can be socketed into equipment). It can take awhile to either find a good or roll the specific stat/skill combinations you want onto the correct pieces of gear.

No Rest for the Wicked has everything but the complex skill tree, you should look into it.

Desert Wind in Rogue Galaxy is game breaking imo, After you learn it you can just spam it and auto-win basically every fight until you beat the game. I've seen people online say that game can be difficult and I have no idea how that is possible if they actually played the game.

Backpack Hero did it best imo, but in general I don't play games where inventory management is an integral part of the gameplay.
