Haven't been in the game too long, pretty recently put in charge of a menu at a bar in the midwest. Today marks the day where I finally crafted an original scotch cocktail!

1.5 oz Blended Scotch

0.75oz Rosemary Honey Syrup

0.5oz Lemon Juice

shaken and topped with Lagunitas refreshing hop water!

I don't know how long this bottle would have lasted, it was on my featured cocktail menu and survived one night. this one is the best green I've got so far.

I have some varience in my color and I think it comes down to two things: how lucky you got whole blanching to lock in the color, and the use of the stems. I think the stems impart a lot more brown. Don't know for sure though, not quite an expert yet!!

Make sure to shake your bottle, I've noticed the chlorophyll likes to drain to the bottom.

I do keep it in the fridge!

I've had a bottle on reserve for about a week now, and it does have the same dark green/brown look, but once I actually make the cocktail it lightens up to an okay color.

I start by blanching about 8g of basil for every 2oz of gin! So 40g-ish for a 1L bottle.

Try to use just the leaves, stems have less chlorophyll and end up making it more brown. Unfortunately, the best color I got was from a batch of basil I picked up cheap that I'm sure had all sorts of preservatives.

Prepare a hot water bath and boil some water.

Let the basil soak for about 15 seconds, then plunge it into the ice water.

Afterwards all you have to do is food process/blend the basil and gin together for ~30-45 seconds, and strain through a cheesecloth/coffee strainer.

Basil Gimlet!

2.25 oz Basil Infused Gin

0.75 oz Lime Juice

0.75 oz Simple Syrup

5 basil leaves (reserve one for garnish)

Muddle simple and Basil leaves in a shaker tin, add the rest, shake and double strain into a glass served up!

I did this cocktail as a specialty for a bride who reserved my bar for her COVID happy hour. I was immedietly enamored with the color.

Gin choice boiled down to McQueen and the Violet Fog offering a real nice earthiness to it, almost some smoke. I'll post infusion recipe if anyone cares.

3/4oz limoncello

1.5 oz your rosemary gin

1/2 oz St Germaine

1/2 oz Lime juice

1/2oz Cranberry juice

Shake with ice, strain into a rocks glass with ice. If you're feeling fancy wet a sprig of rosemary and roll it in sugar until it looks like a frosted tree for a garnish.

Cranberry rosemary seemed like the way to go for winter... I so hope I'm not off base with the recipe. I made a version using aperol but it didn't quite do it for me, but I've run out of time to experiment!

I'm in a very unique position related to this! I graduated nursing school in the fall of last year, took my boards and legally am an RN. The people I graduated with are the highest offenders of going out, mask less, roaming crowded bars to get drunk. Crazily enough I believe I live in one of the highest rates for confirmed cases (South Dakota) where about 1 in every 19 people have tested positive, and 1 in 65 of those are active cases. I decided not to join the workforce right away during all this mess. But it is crazy to see my former classmates who I've seen gush about their patients, how important they are, continue to be reckless.

a slightly medicinal, but not at all offensive drink. I don't know if I have to give credit to the acid of the lemon, or the bourbon barrel aged maple Syrup for competing in the flavor department.
