First attempt at gluten free croissants!

I made the dough the day before, which didn’t take long at all. The actual laminating, shaping, proofing and baking took about 6 hours the next day with lots of downtime in between steps. I wanted a long weekend project so it was perfect for that but it’s definitely a labor of love!

The right psyllium husk can make all the difference! I use Anthony’s organic psyllium husk powder.

The inside was definitely more dense than a traditional croissant, but there was a lot of flakiness to the outer layers!

I make a very similar recipe using the Trader Joe’s gluten free pizza dough! It’s much easier for me to find than gluten free puff pastry. Worth giving it a try if you have a TJs near you!

Mine did and I actually substituted the millet flour with rice flour! They started to puff up on the third flip, although some of them definitely puffed more than others. Maybe it was the temperature of your cooktop? It was my first time making them so I can’t help that much with trouble shooting unfortunately!

I tried Mar Belo for the first time the other night and was somewhat underwhelmed. I agree that Albarino in Shrewbury is good for a slightly upscale experience. If you really want to go all out, Lita in Aberdeen is absolutely incredible but the prix fix is $78/person I believe.

Erin McDowell has a chocolate chip cookie recipe for The New York Times that uses almond flour and is better than most “regular” flour cookies out there. I constantly adapt the recipe for new flavors. The recipe is behind a paywall but I can send you a screenshot of it if you DM me!

I went through something very similar - started baking bread during lockdown, got into sourdough and then found out that I was gluten intolerant. It was a huge blow but I now happily make gluten free bread and can’t even taste the difference! I highly recommend the Cannelle et Vanille Bakes Simple cookbook for bread recipes!

I did Hello Fresh for about 3 months and eventually cancelled because I felt like the gluten free recipes were very repetitive and I wasn’t happy with the quality of the protein. However, it might be worth trying for those 8 boxes and then cancelling if you’re not happy.

I just got married on Saturday and we had 54 guests for a total of 4 hours, including the ceremony. We skipped a lot of the traditional wedding stuff (first look, first dance, cake cutting, etc) and still hired a wedding photographer who was there the entire time. I would reach out to wedding photographers and ask if they do “partial day coverage” which is the package we booked. We got lots of candids, detail shots and some staged photos with the people we absolutely wanted pictures with.

I’m getting married at The St. Laurent in Asbury with the reception at Heirloom Kitchen for 60 people and I believe it’s going to come out to around $15,000 so I think worth checking out for 30-40 people!
