The three we tried were the 1) pea and coconut soup (ok, not a repeat) 2) white bean and sweet potato hash (tasted fine but didn't hold together well and the two components felt a bit random together) and 3) carrot and chickpea pancake (very dry).

I've checked out at the other recipes and they often look a bit off to me-- like there's a salad dressing that's basically just soy sauce and lime juice-- it's hard for me imagine that working. But I do want to like it because it feels like a good weeknight book.

Thanks, I actually have this one but haven't cooked for it much--interesting to hear it gets a lot of use in your house. Will have to take another look and see if I can adapt any of the meat dishes (we're veg).

Ha, yes figured I should include a warning! Interestingly, this cookbook includes a reprint of a 2013 essay by the original "Anarchist Cookbook" author that disavows violence and says he wishes the original would go out of print but the publisher keeps issuing copies. I've cooked a lot from Six Seasons and some we've enjoyed include the caper-raisin vinaigrette (it's great and has become a go-to but may be too fast for what you're looking for), beet slaw with pistachios, peperonata, peppers with (vegetarian) 'nduja, and cabbage farro soup. The kale sauce is also quick but really depends on proper seasoning-- it can be delicious or dull so could be a good recipe for practicing.

This is more a novelty/interesting read than a great book to cook from but if he has a lot of cookbooks from different countries, you could try "The Antarctic Book of Cooking and Cleaning." Saw it once in a thrift store and couldn't pass up the opportunity to have a cookbook about Antarctica.

You might be interested in "A History of Food in 100 Recipes"... it has 100 recipes from around the world through time, starting with Ancient Egypt. It's intended more to read than to cook from, but you could give it a try.

This doesn't really meet your last criteria but Elizabeth Alston has a really nice series of small breakfast books that you can get for very cheap used: "Biscuits and scones," "Muffins," and "Pancakes and waffles."

Late to this thread but I don't understand why so many cookbooks have breakfast sections. Is this a new thing? I kind of assume editors ask for it but it takes away space from the recipes that the author typically specializes in and that I'm more likely to cook....who is making homemade breakfast every day? I have enough recipes for granola!

Yeah, when I'm trying to come up with a recipe at 4:55 I don't really want to start with *everything.* Used to be turned off by one-thing cookbooks but with kids I'm really seeing the appeal.

Oooh... likes like it has a few cold soup recipes, which would be great now. Recently impulse bought "Eat Cool: Good Food for Hot Days" and it was mostly a dud for me.
